Turkey Confit involves curing and cooking turkey legs and wings in duck fat. The result is a dish that is called confit by the French. The process makes the wings andlegs moist and roasting them in the oven afterward makes them crisp.

This is great for several reasons, I will list the top 2. 1. The catering department at Wente is amazing. Farlow leads a team of talented, dedicated professionals with a passion for good, clean and beautifully presented food. 2. Chef Farlow is a very talented chef and I'm hoping that the TV exposure will shed some light on the hidden gem that Wente catering is! TV 30 should consider having Local Chefs host a weekly practical cooking class. Starting with the basics - knife skills.
